Grilled Apple Curry Chicken

Ingrediants

3/4 cup of apple curry chutney*
1/4 cup apple juice
2 cloves of garlic peeled
1 tsp curry powder
1 lb boneless, skinless chicken breast (4 total)
1 package (9 oz) refigerated linguine
snipped parsley

*You can substitute: for apple curry chutney you can mix sweet relish with some applesauce, for galic use 1 teaspoon of garlic powder, and can use dried, boxed linguine or your favorite pasta, can use dried parsley

Instructions

Mix apple curry chutney, apple juice, garlic, curry powder together to make chutney mixture. Grill OR broil chicken, brushing frequently with chutney mixture, 7 to 10 times each side or until chicken is no longer pink in center. Prepare pasta according to directions on package. Toss pasta with parsley. Slice chicken; serve over pasta. Top with reserved chutney mixture.

Meatballs for Speggetti

Ingrediants

1 lb ground beef
1 cup of shredded Mozzarella cheese
1 beaten egg
1 tbsp tomato paste
1 tsp marjoram*
1 tsp garlic salt*
1 tsp oregano*
1/2 cup slice mushrooms* (optional)
*Season To Taste

Instructions

Heat oven at 350 degrees. Mesh all the ingredients together until spices are blended well into the ground beef. Roll into 1-inch balls. Place in a baking pan and bake until the meatballs are brown and no red in the center. Approximately 20 to 30 minutes. (This depends on your oven)

Chocolate Chip Cookies

Ingrediants

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup shortening
1/2 cup of butter or margarine
1 cup of packed brown sugar
1/2 cup of sugar
2 eggs
1 1/2 teaspoon vanilla
1 12 ounce package of semisweet chocolate pieces
1 cup chopped walnuts or pecans (optional)
**can use light butter or margarine

Instructions
Preheat oven to 375 degrees. Stir together flour, soda, and salt. In mixer bowl beat butter or margerine and shortening. Add brown sugar and sugar; beat till light and fluffy. Add eggs and vanilla; beat well. Add dry ingredients to creamed mixture; beat till well blended. Stir in chocolate chips and nuts. Drop dough onto cookie sheet. Bake from 8 to 12 minutes or until done. Remove and cool.

For a pie cookie, use a pie pan and spread cookie dough not quite to the edge of the pie pan (leave some space between dough and wall of pan). Will need to cook close to 15 to 20 minutes or until done. (This is how I do it any way!)

Chocolate Chip Cookies

Ingrediants

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup of butter or margarine**
1/2 cup conola oil
1 cup of packed brown sugar
1/4 cup of sugar
1/4 cup of cinnomon
4 egg whites
1 1/2 teaspoon vanilla
1 12 ounce package of semisweet chocolate pieces
1 cup chopped walnuts or pecans (optional)
**can use light butter or margarine

Instructions

Preheat oven to 350 degrees. Stir together flour, soda, and salt. In mixer bowl beat butter or margarine and oil with a fork (you can use a mixer on low but it is really messy) for 30 seconds. Add brown sugar, sugar, and cinnomon; beat until light and fluffy (will be more creamy than fluffy) with mxer. Add eggs and vanilla; beat well. Add dry ingredients to creamed mixture, beat till well blended. Stir in chocolate pieces and nuts. Drop dough from teaspoon 2 inches apart onto ungreased cookie sheet. Bake in 350 degree oven for 8 to 10 minutes or until done. Remove to another area to cool. This can yeild 6 dozen however this depends on how big you like your cookies.

No-Bake Orange Cookies
From the Kitchen of Doris Meadors

Ingrediants

4 cups graham-cracker crumbs*
1/4 cup light corn syrup
1 cup powdered sugar
1/4 cup butter or margarine, melted
1/3 cup thawed, frozen orange-juice concentrate
1 cup finely chopped nuts
*Gingersnap crumbs can be substituted.

Instructions

In large bowl mix all ingredients until well blended. Shape in 1-inch balls. Store at room temperature. Makes 60.

Chocolate Turtle Cheesecake

Ingrediants

9 inch chocolate crumb piecrust
1 7 ounce package of caramels (or half of a 14 oz bag)
1/4 cup (1 small can) evaporated milk
6 oz chocolate chip pieces
2 (3-ounce_ packages cream cheese soften
1/2 cup sour cream
1 1/4 milk
1/4 teaspoon salt
1 (4 ounce) package of instant pudding mix
For Topping:
2 cups of whipped cream
1/4 cup powdered sugar*
2 tablespoons of baking cocoa*
*Flavor to your taste

Instructions

Combine cream cheese, sour cream, and milk. Original recipe said to process in a blender. Well, I use a mixer, just use a small bowl. Mix until smooth. Add pudding mix; mix about 30 seconds longer. Set aside. Place caramels in a heavy sauce pan. When they begin to melt, add evaporated milk. Heat over medium-heat, stirring continually, until smooth. Remove from heat and stir in chocolate pieces. Pour into piecrust. Pour pudding mixture over caramel layer. Put this in the frig to chill (for faster chilling, put in the freezer). For topping mix the whipped cream, powder sugar, and cocoa. Spread over the pie and chill over night.

Some options. The original recipe that I used as a guideline called for 3/4 chopped pecans instead of chocolate pieces. Mix have the pecans in the caramel mix. Then pour into piecrust. Instead of a whipped topping, drizzle 1/2 cup fudge topping in a decorative pattern, and sprinkle top with remaining pecans.

Orie Pie

Ingrediants

1 large package oreo cookies
1 1/2 sticks margarine soften
1 16 oz cool whip
1 8 or 10 oz cool whip
1 8 oz cream cheese
11 large package instant pudding
1 cup powdered sugar

Instructions

Crush oreoes (don't have to be fine)--save 1 cup for topping. Mix oreos with margarine and press in bottom of 13x9 pan to make crust. With mixer, combine 16 oz cool whip, cream cheese, and powdered sugar. Spread over crust. Mix instant pudding according to directions on box and spread over cream cheese mixture. Refrigerate for 20 min. Spread 8 to 10 oz cool whip over all and sprinkle with reserved crushed oreos. Keep refrigerated until served.

Peach Cobbler

Ingredients

4 cups peaches
1 cup sugar
3/4 cups flour
1 stick butter
3/4 cup milk

Instructions

Mix milk, flour, and sugar. Melt butter and pour into mixture. Pour into baking pan and spoon in the peaches. Bake at 350 degrees for 30 minutes or until done. Do not over cook.

Pecan Pie

Ingrediants

9 inch frozen pie shell
1 teaspoon vanilla
1 cup white corn syrup
2 teaspoons lemon juice
1/2 cup of butter or margarine
1/2 cup brown sugar
3 eggs, slightly beaten
1/4 teaspoon salt
1 cup small pecans, or large meals broken

Instructions

Adjust rack 4 or 5 inches above bottom of oven. Start oven 10 minutes before baking; set to 425 degrees. Combine next six ingredients and stir well until blended then stir in pecans. Pour into pie shell. Bake 10 minutes, then reduce heat to 325 degrees and bake 35 to 40 minutes longer or until crust is golden brown and filling is set.

Marble Brownies

Ingrediants

1 cup butter or marg
3/4 tsp salt
3/4 cup white sugar
1 tsp soda
2 eggs
1 tsp vanilla
2 cups sifted flour
1 cup chocolate chips
3/4 cup chopped nuts (optional)

Instructions

Preheat oven to 350 degrees. Grease a 9x13" pan. Cream butter & sugars thoroughly. Beat in eggs. Combine the flour, salt & soda. Add to first mixture. Mix well, then add vanilla & nuts (if desired) & mix untol well blended. Spread batter evenly into greased pan. Sprinkle the chocolate chips over the top. Put in over for 5 minutes until they start to melt. Remove & with a knife, cut throughout batter "marbleizing" the chocolate chips into the batter. Return to oven and bake for 25-30 minutes until done.

Baker's One-Bowl Brownies

Ingrediants

3 Squares unsweeteded chocolate
3/4 cup (1 1/2 sticks) butter or margerine
2 cups sugar
3 eggs
1 tsp vanilla
1 cup all purpose flour
1 cup nuts

Instructions

Microwave chocolate & margerine in large microwaveable bowl for 2 minutes or until marg is melted. Stir until chocolate is completely melted. Stir sugar into chocolate until well blended. Stir in eggs & vanilla until completely mixed. Mix in flour until well blended. Stir in nuts. Spread in greased 13x9" pan. Bake at 350 degrees for 30-35 min or until toothpick comes out almost clean.
